Ingredients

  • 300g Quorn Vegetarian Steak Strips
  • Rocket
  • 2 tsp balsamic glaze
  • 1 tbsp wholegrain mustard
  • 100g vegan mayo
  • 1 tsp Dijon mustard
  • 2 white onions, finely sliced
  • 1 1/2 tsp balsamic vinegar
  • 1 large Ciabatta loaf
  • 1/2 tbsp extra virgin olive oil
  • 1 tbsp vegetable oil

Method

  1. Fry onions over a medium low heat in half the vegetable oil for 30-40 minutes until fully softened and completely caramelised
  2. Add the balsamic vinegar, mix well and cook until reduced
  3. For the mustard mayo, mix together the mayo and both mustards until fully incorporated
  4. In the remaining vegetable oil, fry the Quorn Steak Strips over a medium heat for 10-12 minutes, season well and fry until browned and hot throughout
  5. Slice the ciabatta in half, drizzle with olive oil. Toast in a griddle pan until well crispy and golden
  6. To assemble, spread the mustard mayo on the toasted ciabatta, top with a layer of caramelised onions, a portion of steak strips, rocket and grizzle with balsamic glaze
  7. Top with the ciabatta & serve
