Ingredients
- 300g Quorn Vegetarian Steak Strips
- Rocket
- 2 tsp balsamic glaze
- 1 tbsp wholegrain mustard
- 100g vegan mayo
- 1 tsp Dijon mustard
- 2 white onions, finely sliced
- 1 1/2 tsp balsamic vinegar
- 1 large Ciabatta loaf
- 1/2 tbsp extra virgin olive oil
- 1 tbsp vegetable oil
Method
- Fry onions over a medium low heat in half the vegetable oil for 30-40 minutes until fully softened and completely caramelised
- Add the balsamic vinegar, mix well and cook until reduced
- For the mustard mayo, mix together the mayo and both mustards until fully incorporated
- In the remaining vegetable oil, fry the Quorn Steak Strips over a medium heat for 10-12 minutes, season well and fry until browned and hot throughout
- Slice the ciabatta in half, drizzle with olive oil. Toast in a griddle pan until well crispy and golden
- To assemble, spread the mustard mayo on the toasted ciabatta, top with a layer of caramelised onions, a portion of steak strips, rocket and grizzle with balsamic glaze
- Top with the ciabatta & serve
