Thai Inspired Quorn Beef Roast Lime & Ginger Curry

This fragrant, Thai Beef Curry with Roast Lime & Ginger is a delicious and tasty mid-week meal ready in just 15 minutes. This recipe uses up leftover Quorn Beef Roast but you could also swap this out for Quorn Vegetarian Roast or Quorn Vegetarian Steak Strips.

Ingredients

  • 1 Quorn Beef Roast, pre-cooked and cut into small chunks
  • Lime & ginger stock pot
  • Can of coconut milk
  • 1 red onion, sliced
  • ½ orange pepper, sliced
  • ½ green pepper, sliced
  • Fresh chillies
  • 1 tsp coconut oil
  • 150g cooked rice

Method

  1. Sautee off the chopped red onion, chillies and pepper in the coconut oil.
  2. Once softened, add in the chopped-up Quorn Beef Roast and heat through.
  3. Add in the can of coconut milk and lime and ginger stock pot and leave to simmer for 5 minutes.
  4. Serve up with 75g of cooked rice per person and enjoy!
