
Vegetarian Teriyaki Strips Stir-fry

A totally tasty teriyaki-style stir-fry, packed with vibrant veg and succulent Quorn Vegetarian Strips. Served with rice, it’s a quick, easy and budget friendly weeknight meal that’ll be on the table in just over 20 minutes - so it’s perfect for those busy evenings at home!

Ingredients

1 x 300g pack Quorn Strips
-
2 tbsp. teriyaki sauce
-
1 tbsp. honey
-
1 tsp. tamarind sauce
-
2 limes, juice only
-
2 cloves garlic, crushed
-
1 thumb ginger, grated
-
A drizzle olive oil
-
1 small carrot, sliced into fine matchsticks

1 red pepper, sliced
-
100g tenderstem broccoli
-
100g mange tout
-
400g long grain rice
-
To garnish:
-
1 spring onion, sliced
-
½ tsp. sesame seeds
Method
- Place the teriyaki sauce, honey, tamarind sauce, lime juice, garlic and ginger in a bowl. Add 50ml of water and mix well.
- Heat a non-stick frying pan over a medium heat. Add the oil to the pan. Add the Quorn Strips and cook for 6 minutes stirring regularly.
- Add the prepared sauce, carrot, red pepper and broccoli, cook for 4 minutes stirring regularly.
- Add the mange tout and cook for a final 2 minutes. Set aside and keep warm.
- Cook the rice as per pack instructions. Drain and divide between 4 warmed serving bowls.
- Top the bowls with the Quorn Teriyaki Stir-fry and garnish with spring onion and sesame seeds.
