Vegetarian BBQ Steak Strips and Cheese Quesadilla

These easy Vegetarian BBQ Steak Strips and Cheese Quesadillas make the BEST quick and easy meat-free lunch or dinner! Ready in just 15 minutes, this delicious dish is simply mouth-watering.

Pan fry Quorn Vegetarian Steak Strips with sweetcorn and red onion, then combine with a light cream cheese and BBQ seasoning before loading up your tortilla wraps for an indulgent, vegetarian Mexican dish.

Serve with a side of guacamole and salad for a delicious feast.

Ingredients

  • 150g Quorn Vegetarian Steak Strips
  • 4 mini tortilla wraps
  • 180g protein cheese
  • 70g light cream cheese
  • 2 tbsp BBQ seasoning mix
  • 140g frozen sweetcorn
  • 1 red onion, diced
  • Spray oil

Method

  1. Put a pan on medium heat and spray with low calorie oil.
  2. Add the Quorn Steak Strips, sweetcorn & red onion into the pan and leave to cook for around 7 minutes.
  3. Add the BBQ seasoning and the light cream cheese into the pan and mix in. If this is too thick you can add a splash of water too.
  4. Put the steak strips mix into a separate bowl and add the tortilla wrap into the pan.
  5. Top with protein cheese and cover the pan with a lid and leave until the cheese has melted and the wrap has gone crispy.
  6. Once done, add in half of the steak strips mixture and fold the wrap in half.
  7. Repeat this process with the other wraps.
  8. Serve and enjoy!
