Crispy Vegan Chicken Sandwich With Quorn Crunchy Strips
Try this delicious crispy vegan chicken sandwich, perfect for a quick meat-free lunch or light dinner. Made with Quorn Crunchy Strips, creamy spiced chipotle mayo and sharp pickled onions, layered with avocado and tomato between toasted sourdough. Our vegan sandwich paired with out vegan chicken recipes are designed to be meat-free and full of flavour. This sarnie is guaranteed to liven up your lunchtime!

- 2 Quorn Crunchy Strips
- ½ tbsp vegan mayonnaise
- ½ tsp chipotle sauce
- 2 slices sourdough bread
- Handful of rocket
- 1 slice beef tomato
- ¼ avocado, sliced
- 1 tbsp pickled red onion
- Preheat oven and baking tray to 220°C/Fan 200°C/Gas 7. Cook Quorn Crunchy Strips for 18-20 minutes until crispy.
- Meanwhile, pre-heat a griddle pan over a high heat. Toast one side of the sourdough slices for 1-2 minutes.
- Mix together the mayonnaise and chipotle sauce in a small bowl. Spread the chipotle mayo on the un-toasted side of each slice of bread.
- Lay the sandwich by placing one slice of sourdough toasted side down, top with the rocket, 2 crunchy strips, a slice of beef tomato, sliced avocado and pickled red onion. Top with the remaining sourdough slice and enjoy!
