Ingredients
- 8 Quorn Vegetarian Sausages
- 500g gnocchi
- 150g cavolo nero or spinach, sliced
- 1 medium leek, thinly sliced
- 5 cloves garlic, diced
- 1 white onion, diced
- A few sprigs of fresh rosemary & thyme (dried will also work)
- 500ml vegetable stock
- 100g light cream cheese/reduced fat creme fraiche
- 2 tsp mustard
- Vegetarian parmesan
- 2 tbsp cornstarch (optional)
Method
- Start by frying the Quorn Vegetarian Sausages according to pack instructions in a pan with a little olive oil.
- Remove and set aside, then in the same pan, add garlic, onion, herbs and leeks. Fry for several mins until fragrant.
- Add the stock, a few generous dollops of light cream cheese or creme fraiche and mix well before adding mustard, fresh thyme and rosemary and season to taste. If you need a thicker sauce at this stage, mix the cornflour with some hot water and pour into the sauce. Stir until combined and the sauce has thickened.
- Then add in the cavolo nero/spinach and simmer until lightly wilted. Add the gnocchi and allow to simmer in the sauce for just a couple of mins until cooked through.
- Pop the Quorn Vegetarian Sausages back on top, grate over parmesan and then heat under the grill for 5-10 minutes until the Quorn Sausages are warmed and the cheese is melted.
