Creamy Leek and Greens Gnocchi with Quorn Sausages

This lighter version of a creamy veggie gnocchi dish is super comforting and packed full of greens! Ready in just 30 mins it’s perfect for a tasty midweek meal for the whole family.

Simply fry Quorn Vegetarian Sausages until golden before making a deliciously creamy sauce with leeks, cavolo nero and cream cheese. Simply toss in your gnocchi and simmer until pillowy soft and coated in delicious sauce! Sprinkle this tasty vegetarian gnocchi with parmesan and grill until bubbling and melted.

Ingredients

  • 8 Quorn Vegetarian Sausages
  • 500g gnocchi
  • 150g cavolo nero or spinach, sliced
  • 1 medium leek, thinly sliced
  • 5 cloves garlic, diced
  • 1 white onion, diced
  • A few sprigs of fresh rosemary & thyme (dried will also work)
  • 500ml vegetable stock
  • 100g light cream cheese/reduced fat creme fraiche
  • 2 tsp mustard
  • Vegetarian parmesan
  • 2 tbsp cornstarch (optional)

Method

  1. Start by frying the Quorn Vegetarian Sausages according to pack instructions in a pan with a little olive oil.
  2. Remove and set aside, then in the same pan, add garlic, onion, herbs and leeks. Fry for several mins until fragrant.
  3. Add the stock, a few generous dollops of light cream cheese or creme fraiche and mix well before adding mustard, fresh thyme and rosemary and season to taste. If you need a thicker sauce at this stage, mix the cornflour with some hot water and pour into the sauce. Stir until combined and the sauce has thickened.
  4. Then add in the cavolo nero/spinach and simmer until lightly wilted. Add the gnocchi and allow to simmer in the sauce for just a couple of mins until cooked through.
  5. Pop the Quorn Vegetarian Sausages back on top, grate over parmesan and then heat under the grill for 5-10 minutes until the Quorn Sausages are warmed and the cheese is melted.

Very easy to make and so delicious! Will make this again for sure! Would also be nice with quorn pieces I think!
