
Fruity Apple & Sausage Tray Bake with Quorn Vegetarian Sausages

Preheat the oven to 240°C (220° fan) / 475F / gas 9.
Put the peppers, onion, courgettes and thyme in a roasting dish. Drizzle with 1.5 tbsp olive oil and season with salt and pepper. Toss well then roast for 10 minutes.
Brush the Quorn Sausages with the rest of the oil, add them to the dish and return to the oven for 10 minutes.
Transfer the Quorn Sausages to a plate. Stir the garlic, paprika, tomato puree and stock cube into the vegetables, followed by the canned tomatoes and 350 ml boiling water.
Return the Quorn Sausages to the dish and bake for 15 minutes, then stir in the gnocchi and return to the oven for 5 minutes.
Remove from the oven, stir in the cream cheese and sprinkle with parsley and serve.

The sausages were lukewarm, and would have benefitted from pre-browning, or cutting into sections. The sauce was more watery than expected, despite adding 350mls water (not 400). Could be amazing, but needs adjusted. Will try again!

An excellent family dinner. We cut the vegetables slightly smaller & it's being a good introduction to different vegetables for our young son. A very inexpensive dinner with enough left overs for another meal.
