Breakfast Traybake with Quorn Vegetarian Sausages

This delicious Breakfast Traybake is all cooked in one tray making it the perfect lazy weekend vegetarian brunch idea.

Quorn Vegetarian Sausages are baked along with tomatoes and crispy potatoes before being topped with runny eggs and fresh avo – perfect for dipping your toast into!

  • 4 Quorn Vegetarian Sausages
  • 1 medium potato
  • 4 eggs
  • 1 handful cherry tomatoes
  • 1 handful fresh coriander
  • 1 avocado
  • 2 tbsp olive oil
  • Salt & pepper


  1. Line a baking tray with baking paper and preheat oven to 200°C (fan).
  2. Chop your potato up into bite-size chunks and cut your cherry tomatoes into halves.
  3. Add your Quorn Vegetarian Sausages, tomatoes and potatoes to the baking tray, drizzle with olive oil, season well with salt and pepper and bake for 15 mins.
  4. After 15 mins, remove from the oven and make a few spaces on the tray to crack your eggs into.
  5. Pop back into the oven for another 10-15 mins until your eggs are cooked to your liking!
  6. Serve up topped with sliced avocado and garnish with fresh coriander.
  7. Enjoy!
