Ingredients
- 4 Quorn Vegetarian Sausages
- 1 medium potato
- 4 eggs
- 1 handful cherry tomatoes
- 1 handful fresh coriander
- 1 avocado
- 2 tbsp olive oil
- Salt & pepper
Method
- Line a baking tray with baking paper and preheat oven to 200°C (fan).
- Chop your potato up into bite-size chunks and cut your cherry tomatoes into halves.
- Add your Quorn Vegetarian Sausages, tomatoes and potatoes to the baking tray, drizzle with olive oil, season well with salt and pepper and bake for 15 mins.
- After 15 mins, remove from the oven and make a few spaces on the tray to crack your eggs into.
- Pop back into the oven for another 10-15 mins until your eggs are cooked to your liking!
- Serve up topped with sliced avocado and garnish with fresh coriander.
