Waffle Topped Vegetarian Cottage Pie

Cottage pie mix with Quorn Vegetarian Mince topped with mini potato waffles and cheese.

This nostalgic twist on the classic Cottage Pie is so easy to make, and perfect for the whole family! This recipe uses Quorn Vegetarian Mince to make a tasty ragu, before simply topping with mini potato waffles instead of mashed potatoes for a crispy and cheesy topping. This potato waffle veggie cottage pie will have kids and parents alike reaching for more! Hearty and delicious!

Ingredients

  • 500g Quorn Vegetarian Mince
  • 1 large carrot
  • Handful of mushrooms
  • 100g peas
  • 1 small white onion
  • 1 cottage pie sachet mixture
  • 1 pack mini potato waffles
  • 100g of mixed grated cheese (cheddar & mozzarella)
  • Spray oil

Method

  1. Preheat the oven to 180°C. Cook your potato waffles according to pack instructions.
  2. Meanwhile, heat the spray oil in a saucepan, add the onion, mushrooms and carrot and fry until soft.
  3. Add the Quorn Mince and Cottage Pie seasoning mix with water and simmer for 5 minutes. Next add in the frozen peas.
  4. Add the Cottage Pie filling to an ovenproof dish and top with the mini potato waffles and grated cheese. Bake for 15 minutes or until the top is crispy.
  5. Serve up with vegetables of your choice and enjoy!
