Vegan Buffalo Wings n Waffles

Ingredients

  • 1 pack Quorn Buffalo Wings
  • Spring onions, sliced (to serve)
  • Buffalo Sauce:
  • 100ml Frank's Redhot Original Pepper Sauce
  • 60g plant butter
  • 1 tbsp white vinegar
  • 1 tsp cayenne pepper
  • 1 tsp vegan worcester sauce
  • 1 tsp garlic powder
  • Vegan Ranch:
  • 100ml vegan mayo
  • 1-2 tbsp non-dairy milk
  • 1/2 tsp apple cider vinegar
  • 1 clove garlic, crushed
  • 1/2 tsp dried dill
  • ½ tsp onion powder
  • ¼ tsp paprika
  • 1/4 tsp pepper
  • Salt, to taste
  • Vegan Waffles:
  • 375g unsweetened plant milk
  • 2 tsp apple cider vinegar
  • 240g plain all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp sea salt
  • 1 tbsp brown sugar or maple syrup
  • 2 tbsp melted vegan butter
  • 1/2 tsp vanilla extract

Method

  1. In a medium-sized saucepan combine the Buffalo Sauce ingredients, mix well and bring to a boil. Reduce heat and simmer for 6 minutes. Set aside until cool.
  2. To make the vegan ranch, combine all ingredients together in a bowl and set aside.
  3. To make the vegan waffles, mix the plant milk, vanilla extract and apple cider vinegar together in a small bowl and set aside for about 5 minutes to curdle to make vegan buttermilk.
  4. In a large bowl combine the flour, baking powder and salt before adding the sugar, melted butter, and buttermilk mixture. Mix well until you form a smooth batter.
  5. Pre-heat your waffle maker, add enough batter to cover and cook according to manufacturer's instructions. Repeat until you make 4 waffles, transfer to a preheated oven on a low heat to keep warm.
  6. Meanwhile, cook Quorn Buffalo Wings as per instructions. Remove from oven and toss in buffalo sauce until thoroughly coated.
  7. Stack the waffles with ranch sauce, Quorn Buffalo wings, sprinkle with spring onions and enjoy!
