
Fajitas Recipe with Quorn Fajita Mini Fillets
Spice up your family fajita night with a fajita board! This recipe uses ready to eat Quorn Fajita Mini Fillets plus all your faves including creamy homemade guacamole, sour cream and a zesty tomato salsa.
This fajita platter couldn’t be easier to create and is perfect for a tasty weeknight dinner! Simply spice and roast the peppers with the Quorn Fajita Mini Fillets and whip up a quick tomato salsa with tomato, red onion, lime and chilli. Mash avocados and lime into a tasty homemade guac and add everything to a board. Load the fillings into warm tortilla wraps, smother with creamy guacamole and sour cream, and dig in!

Made with Quorn Fajita Mini Fillets

Ingredients
- 2 packs of Quorn Fajita Mini Fillets
- Mini tortilla wraps
- 250g baby tomatoes
- 2 peppers (1 red + 1 yellow)
- Chopped lettuce
- 1 small red onion
- 2 avocados
- 2 or 3 limes
- Sour cream
- Fresh coriander
- Cumin
- Paprika
- Ground coriander
- Chilli flakes
- Salt & pepper
Method

Preheat oven to 200°C. Pop the sliced peppers on a tray with a little oil and a sprinkle of cumin, paprika, ground coriander + salt. Roast for 10 to 15 mins before adding the Quorn Fajita Mini Fillets. Roast for a further 5 to 10 mins to heat up the Fillets.

Meanwhile make the tomato salsa by mixing together chopped tomatoes, finely diced red onion, chopped fresh coriander, a squeeze of fresh lime juice and a sprinkle of salt + chilli flakes.

For the guacamole mash together the avocado, fresh lime juice and salt + pepper.

Assemble everything on a board. Start with all your dips, and then add your Quorn Fajita Mini Fillets, roasted peppers, tortilla wraps, chopped lettuce, extra tomatoes and wedges of lime.
