One Pot Harissa Quorn Meatballs

This one pot veggie Harissa meatball hot pot is a quick and simple dish which will be sure to leave you satisfied. Simply bake our delicious Quorn Swedish Style Balls with red onion, aubergine and peppers and serve with rice or pasta for a fast weeknight meal. Swap out the veg to match your taste and add extra harissa for a kick!

Ingredients

Method

  1. Preheat the oven to 200C/fan 180C/gas mark 6.
  2. Peel the onions, cut into quarters and break apart into petals. Chop peppers into similar size chunks. Dice the aubergine into large chunks.
  3. Put all the vegetables into a large mixing bowl, add the Quorn Swedish Style Balls, the harissa, plus 2 tbsp olive oil, mix thoroughly.
  4. Using a casserole dish, spread the mixture out evenly and bake for 25 mins.
  5. Serve with fresh mint sprigs and an optional spoonful of crème fraiche.
