This Harissa Swedish Style Balls Vegetarian Salad Bowl is the perfect light, refreshing, meat-free summer salad recipe.

Ready in under 20 minutes, it’s great for a quick and easy veggie lunch or an alfresco dinner in the sunshine!

Simply build your bowl with cous cous and hummus, pan fry your Quorn Swedish Style Balls in a harissa paste, then top with a cool cucumber and red onion salad, feta and fresh mint!

Made with Quorn Vegetarian Swedish Style Balls

Ingredients

  • 10 Quorn Swedish Style Balls
  • 1 red onion
  • ½ a cucumber
  • 50g hummus
  • ½ a lemon
  • 50g olives
  • ½ a block of feta
  • Handful of fresh mint
  • 120g couscous
  • 1 tbsp harissa paste
  • 1 tbsp red wine vinegar
  • 2 tbsp olive oil

Method

  1. Fry the Quorn Swedish Style Balls in 1 tbsp of olive oil and the harissa paste for 15 to 18 mins, tossing every now and then until evenly browned off.
  2. Meanwhile, cook your couscous according to pack instructions.
  3. For the salad, finely chop the cucumber and red onion and add the red wine vinegar, rest of the olive oil and salt & pepper.
  4. Add the couscous to a bowl, along with some hummus and top with the harissa Swedish Style Balls, cucumber + onion salad, olives, feta and fresh herbs.
  5. Finish off by squeezing over some lemon juice and seasoning with more salt & pepper. Enjoy!
