Ingredients

  • 16 Quorn Swedish Style Balls
  • 1 clove garlic, crushed
  • 400g tin finely chopped tomatoes
  • ½ tsp dried oregano
  • ½ tsp chilli flakes (optional)
  • A few sprigs basil, shredded
  • 4 soft white sub rolls
  • 1 mozzarella ball, thinly sliced
  • 2 tbsp vegetarian parmesan, finely grated
  • 1 tbsp oil

Optional side salad with vinaigrette ingredients:

  • 125g mixed leaf salad
  • ½ cucumber, thinly sliced
  • ½ small red onion, thinly sliced
  • 2 tbsp white wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp caster sugar
  • 2 tbsp olive oil

Method

  1. Heat the oil in a frying pan and sear the Quorn Swedish Style Balls all over until golden brown.

  2. Add the garlic and stir for 1 minute, then pour in the chopped tomatoes. Season with salt and pepper and sprinkle with oregano and chilli flakes (if using), then simmer for 10 minutes or until the sauce has thickened. Take the pan off the heat and stir in half the basil.

  3. Split the rolls down the middle and spread the insides with the sauce. Nestle four Quorn Balls inside each roll, and top alternate balls with mozzarella.

  4. Cook under the grill until the cheese melts, then garnish with basil and vegetarian parmesan.
