Ingredients

  • 1 pack (336g) Quorn Vegetarian Sausages
  • 2 tbsp olive oil
  • 2 large leeks, chopped
  • 1 head broccoli, cut into small florets
  • 250g Orzo
  • 800ml vegetable stock
  • 100g low fat garlic and herb cream cheese

Method

  1. Heat a tablespoon of the olive oil in a large frying pan, add the Quorn Vegetarian Sausages and cook for 5-6 minutes all over until golden. Remove the sausages from the pan and chop into pieces.

  2. Heat the remaining oil in the pan and over a medium heat cook the leeks until wilted and tender, for about 4-5 minutes.

  3. Stir in the broccoli and cook for 3 minutes then add the orzo and vegetable stock and return the Quorn Sausage pieces to the pan. Toss everything together and simmer for about 10 minutes until most of the liquid has been absorbed by the orzo.

  4. Stir in the garlic and herb cream cheese and cook for a further 2 minutes. Serve ladled into bowls and enjoy!

I used 1 red onion instead of the leeks because that's what I had to hand, but this was delicious and added bonus that it was so quick and easy. I will definitely make it again!
