Roasted Veggie Pasta with Quorn Sausages

This Roasted Veggie Pasta with Quorn Sausages is a guaranteed to become a weekly fave! Roast peppers, tomatoes and onions in a creamy red pesto sauce with Quorn Vegetarian Sausages, totally delish and ready in just 35 minutes!

Start by cooking the pasta and roasting the Quorn Vegetarian Sausages before adding in your veggies until everything is charred and delicious. Slice the Sausages and add the stock, cream and red pesto and roast for a further 5 mins. Combine everything together, spoon into bowls and dig in!

Ingredients

  • 336g bag Quorn Vegetarian Sausages
  • 500g pasta (such as penne or conchighli)
  • 2 red onions, cut into wedges
  • 1 red pepper, chopped into pieces
  • 1 yellow pepper, chopped into pieces
  • 350g cherry tomatoes
  • 4 cloves garlic
  • 200ml vegetable stock
  • 150ml double cream
  • 2 tbsp red pesto
  • 3 tbsp flat leaf parsley, finely chopped
  • 2 tsp olive oil

Method

  1. Preheat the oven to 180C/fan 160C/gas 4. Bring a large pan of water to the boil and cook the pasta according to the packet instructions. Drain and set aside.

  2. Drizzle a roasting tin with the oil and add the Quorn Sausages and cook for 10 minutes until starting to turn golden.

  3. Add the peppers, cherry tomatoes, garlic cloves and roast for a further 15 minutes until the peppers and onions are softened and charred at the edges and the tomatoes have wilted.

  4. Remove the Quorn Sausages from the tin and chop into pieces.

  5. Add the vegetable stock, cream and red pesto to the roasting tin and return to the oven for a further 5 minutes.

  6. Return the Quorn Sausages to the roasting tin along with cooked pasta. Toss everything together with the chopped parsley. Serve spooned into bowls.
