½ a pack of Quorn Cocktail Sausages

¼ of a cucumber

½ a red pepper

2 eggs, boiled

2 tbsp hummus

A handful of pomegranate seeds

2 tbsp tzatziki dip

A handful of olives

Rosemary salted crackers

30g of cheddar cheese, cut into chunks

For the mini Caesar salad:

30g romaine lettuce, chopped

1 tbsp Caesar dressing

A handful of croutons
Method
- Chop your cucumber and red pepper into slices.
- Make your mini Caesar salad by combining the ingredients in a bowl.
- It’s time to assemble– arrange everything on a board. Top your hummus with the pomegranate seeds and enjoy!
