Ingredients

  • ½ a pack of Quorn Cocktail Sausages

  • ¼ of a cucumber

  • ½ a red pepper

  • 2 eggs, boiled

  • 2 tbsp hummus

  • A handful of pomegranate seeds

  • 2 tbsp tzatziki dip

  • A handful of olives

  • Rosemary salted crackers

  • 30g of cheddar cheese, cut into chunks

  • For the mini Caesar salad:

  • 30g romaine lettuce, chopped

  • 1 tbsp Caesar dressing

  • A handful of croutons

Method

  1. Chop your cucumber and red pepper into slices.
  2. Make your mini Caesar salad by combining the ingredients in a bowl.
  3. It’s time to assemble– arrange everything on a board. Top your hummus with the pomegranate seeds and enjoy!
