Vegetarian Sausage and Tortellini Soup

Ingredients

  • 1 pack Quorn Cocktail Sausages, sliced
  • 1 tbsp olive oil
  • 3 clove garlic, minced
  • 1 yellow onion, diced
  • 1 stick celery, diced
  • 2 medium carrots, diced
  • 1 400g can chopped tomatoes
  • 2½ cup spinach
  • 250g cooked tortellini
  • ½ cup double cream
  • 1 tbsp Italian seasoning
  • 3 cup vegetable stock
  • Salt and pepper to taste

Method

  1. Heat olive oil in a large pan over a medium heat. Add the Quorn Cocktail Sausages and sauté for 4-5 minutes until browned. Transfer to a plate and set aside.
  2. Add onion, garlic to the pot and sauté for 3-4 minutes.
  3. Add carrots, celery and sauté for a few more minutes.
  4. Add the diced tomatoes, veg stock, Italian seasoning, salt and pepper to the pot. Cover the pot with a lid and allow the soup to simmer for at least 8-10 minutes.
  5. Add the fresh tortellini and cook for 3 minutes (as per packet instructions)
  6. Stir in the cream, spinach, sausages and return the lid to the pot. Allow the spinach to wilt. Serve the sausage tortellini soup immediately and enjoy!
