Vegan Festive Loaded Fries

These vegan loaded fries are perfect for full-on festive feasting. Whether you’re serving up on a platter for a party, or as a showstopping alternative to roast potatoes on the big day. Simply load up homemade fries with thick slices of Quorn Brilliant Bangers and stuffing, top with crispy onions, gooey vegan cheese, dollops of cranberry sauce and get feasting! Serve with your favourite vegan gravy for some extra indulgence.

Ingredients

  • 1 chilled pack Quorn Brilliant Bangers, thickly sliced
  • 4 large white potatoes
  • 2 banana shallots, finely sliced
  • Salt and pepper to taste
  • Fresh rosemary and sage
  • 110g of your favourite vegan stuffing mix
  • 1 tbsp olive oil
  • 100g vegan cheese, finely grated
  • Cranberry sauce, to serve

Method

  1. Pre-heat the oven to 200C/180C fan.
  2. Prepare stuffing according to packet instructions, stir in some olive oil and set aside to cool.
  3. In a pan over a medium heat, melt a little butter and olive oil and gently sauté the onions for aorund 5 minutes. Once they’ve gained a bit of colour, turn the heat up and let them fry for a further 8 minutes or so, until they’re golden and crispy. Set aside.
  4. Cut the potatoes into chunky fries. You can leave the skin on if you prefer.
  5. Place the potatoes into a pan of boiling water and par boil for 5 minutes until they begin to get tender but not soft. After 5 minutes, drain them well then place the pan back onto a gentle heat to steam off any extra moisture.
  6. Pour a dash of oil and seasoning into the pan with the chips, place the lid on and bash them about until the chips are coated well. Lay them onto a baking tray and roast for 20 minutes.
  7. After 20 mins, add the sliced Quorn Brilliant Bangers and shimmy everything around in the pan. Tear off little chunks of the stuffing and dot them on top of the fries and bangers. Place them back into the oven for a further 15 minutes.
  8. Once your fries, Brilliant Bangers and stuffing pieces are nicely golden, remove from oven and sprinkle with vegan cheese. Place the tray back into the oven for a further 5 minutes until the cheese has melted.
  9. Serve with a drizzling of cranberry sauce, a sprinkle of crispy onions and your favourite vegan gravy. Happy feasting!
