Turn up the heat in your kitchen with our vegan sausage jambalaya. This one-pot-wonder is made with delicious Quorn Brilliant Bangers, perfect for a weekday mealtime or for your next vegan fiesta!
for the Cajun spice mix, simply mix all ingredients together in a bowl and then decant into a container.
Gently heat a little olive oil in a large casserole or frying pan. Add in the chopped Brilliant Bangers and a teaspoon of smoked paprika. Sauté the bangers until they're golden brown all over. Remove, and set aside on a plate.
Add the chopped onion to the pan and gently cook for 3-4 mins until soft and beginning to colour, stir in the red pepper, garlic, and 1 tbsp of the Cajun seasoning. Mix well and cook for a further 5 minutes.
Stir in the cooked Brilliant Bangers along with 250g long grain rice. Add the chopped tomatoes and the vegetable stock. Cover and simmer for 20-25 mins until the rice is tender and serve straight from the pan.
