Ingredients

  • 280g Quorn Crispy Nuggets or Quorn Vegan Nuggets
  • 600g of mixed root vegetables (eg potatoes, parsnip, carrot)
  • Oil
  • Salt
  • Pepper
  • 2½ tbsp cornflour
  • 4 tablespoons rice or white wine vinegar
  • 4 tablespoons sugar
  • 4 tablespoons ketchup
  • 1 teaspoon salt
  • 2 tbsp of water
  • 1 tablespoon oil

Method

  1. Cut the root vegetables into long strips. Cover with a little oil, salt and pepper before putting into the oven at 250 degrees for about 20 minutes, flipping occassionally.
  2. Cook the Quorn Nuggets according to the package instructions.
  3. For the dipping sauce, boil all ingredients in a saucepan.
  4. Mix the cornflour in some water and pour into the saucepan. Boil for another minute and leave to cool.
  5. Serve the nuggets and roasted root vegetables with the dip and enjoy!
