Vegan One-Pot Pasta with Quorn Brilliant Bangers & Broccoli

Ingredients

  • 1 pack Quorn Brilliant Bangers
  • 1 tbsp olive oil
  • 1 large red onion, sliced
  • 2 cloves garlic, crushed
  • 200g tenderstem broccoli
  • 400g tinned cannellini beans, drained
  • 400g tinned chopped tomatoes
  • 4 tbsp tomato puree
  • 700 ml vegetable stock
  • 1 1/2 tsp ground paprika
  • 1 tsp chilli flakes
  • Salt and pepper to taste
  • 224g of your favourite pasta (dried)

Method

  1. Fry the Quorn Brilliant Bangers in a little oil in a large pan over a medium heat until golden, around 6 - 8 minutes. Remove from pan, cut into small pieces and set aside.
  2. Return the pan to heat, add a drizzle more oil and sauté the onion and garlic until soft, then add the uncooked broccoli and fry for a few more minutes.
  3. Add the chopped Bangers pieces back to the pan along with the drained cannellini beans.
  4. Add the chopped tomatoes, tomato puree, stock, spices, salt and pepper and stir well.
  5. Mix in the uncooked pasta, emerging and covering it in the sauce as much as possible.
  6. Add a lid to the pan and cook on a medium heat for 15 - 20 minutes until the pasta is al dente (soft with a little bit of firmness). Stir halfway through to prevent sticking.
  7. Serve with vegan cheese and enjoy!
