Veggie Smashburger Tacos with Quorn Sweet Chilli Mini Fillets

Ingredients
- ½ pack Quorn Vegetarian Sweet Chilli Mini Fillets
- 4 mini tortilla wraps
- 4 cheese slices
- 100g lettuce
- ½ an avocado
- 6 cherry tomatoes (chopped)
- 1 tbsp BBQ sauce
- ½ tsp smoked paprika
- Salt & pepper
For the pickled onions:
- 1 onion (finely sliced)
- 1 cup of water
- 3 tbsp sugar
- 1 tsp salt
- ⅓ cup of balsamic vinegar
- Splash of soy sauce
For the homemade spicy mayo:
- 2 tbsp mayonnaise
- 1 tbsp hot sauce
- 15g fresh coriander
- 1 garlic clove, grated
Method
- For the quick pickled onions, get a saucepan and boil the water with all the ingredients. Place the onions in a bowl and pour in the hot mixture and leave it until cooled.
- Shred the Quorn Sweet Chilli Mini Fillets using a grater. Add it into a hot pan and cook down, add the smoked paprika, salt & pepper and BBQ sauce. Add a splash of water and stir until combined.
- Spread the Quorn Sweet Chilli Mini Fillets mix evenly on the wraps until the wrap is covered and place face down in a hot frying pan until browned and crispy. Flip and add cheese slices on top and cook on the other side until the cheese has melted. Remove from the pan and add your lettuce, tomatoes, pickled onions and the spicy sauce.
