Ingredients
- 1 pack of Quorn Vegetarian Fillets
- 1 onion
- 2 garlic cloves
- 1 tin of chopped tomatoes
- 2 tbsp birria paste (or alternatively blend dried ancho and guajillo chillies)
- ½ tsp oregano
- 1 tsp paprika
- 300ml vegetable stock
- ½ tsp cinnamon
- 1 bay leaf
- 8 soft taco wraps
To garnish:
- ½ an onion, diced
- 15g of fresh coriander
- 60g grated mozzarella
Method
- Dice the onions and cook until translucent (for around 2 minutes). Next add in your chopped garlic cloves and cook until fragrant.
- Add in your birria paste (or blended chillis) and cook for a couple of minutes. Add in the chopped tomatoes, vegetable stock and all your spices.
- Next add in the frozen Quorn Vegetarian Fillets, cover and reduce to a low heat and let this cook for around an hour.
- Remove the Quorn Vegetarian Fillets from the sauce and place onto a board and shred using 2 forks.
- Blend the sauce using a blender and add back to the pan. Heat through and then add in your shredded Quorn Vegetarian Fillets back in.
- Dip each of your taco wraps into the sauce and place in a frying pan on a high heat. Add the shredded Quorn Vegetarian Fillets, onion, coriander and mozzarella cheese and fold over so that the cheese melts.
- Serve and enjoy!
