Ingredients

  • 280g Quorn Vegan Pieces (one packet)
  • 3 tbsp vegan oyster sauce or hoisin sauce
  • 1 tbsp light soy sauce
  • 1⁄2 tsp Chinese 5 spice
  • 1 tbsp root ginger, grated
  • 1/4 water
  • 2 tbsp sesame oil
  • Salt and Pepper to taste
  • 4-5 pak chois
  • 150g tenderstem broccoli
  • 100g baby corn
  • 100g sugar snap Peas
  • 2 tsp white and black sesame seeds, to garnish
  • 500g steamed rice or your choice of noodles

Method

  1. Preheat oven at 200°C/Gas mark 6
  2. In a large mixing bowl cobine Quorn Vegan Pieces with the vegan oyster sauce (or hoisin sauce), soy sauce, chinese 5 spice and grated ginger. Add salt & pepper to taste and mix thoroughly until all the pieces are nicely coated. If the mix is slightly thick, gradually add some water.
  3. Place the Quorn Vegan Pieces onto a large roasting tray and bake for 20 minutes.
  4. Remove tray from oven and add your choices of vegetables. Drizzle any leftover marinade over the vegetables and pieces, along with the sesame oil. Place the tray back into the oven and bake for a further 15-20 mins, check the progress of your vegetables midway to make sure they that they have not burnt.
  5. Serve your traybake with rice or noodles, garnish with seseme seeds and enjoy!
