Ingredients
- 4 Quorn Sausages
- 1 tbsp of olive oil
- 1 large red onion
- 1 tbsp balsamic vingear
- 1 tin of green lentils
- 2 handfuls of spinach
- Salt to taste
Method
- Cook the Quorn Sausages according to packet instructions and set aside
- Slice the red onion into half moon shapes and set aside
- Heat the oil over a medium heat in a large frying pan
- Add the sliced red onions and turn the heat down to low. Add a pinch of salt. Slowly cook the onions until they are softened and starting to brown slightly, approximately 20-25 minutes
- Add the tbsp. of balsamic vinegar, increase the heat to medium high and continue to cook the onions until the vinegar has reduced to a sticky glaze
- Drain and rinse the lentils and add to the pan
- Slice the sausages and add to the pan and toss with the onions and lentils
- Add the spinach and mix into the pan until it has wilted
- Add salt to taste and serve with an extra drizzle of balsamic vinegar if desired
