Quorn Sausages with Lentils & Balsamic Caramelised Red Onions

Ingredients

  • 4 Quorn Sausages
  • 1 tbsp of olive oil
  • 1 large red onion
  • 1 tbsp balsamic vingear
  • 1 tin of green lentils
  • 2 handfuls of spinach
  • Salt to taste

Method

  1. Cook the Quorn Sausages according to packet instructions and set aside
  2. Slice the red onion into half moon shapes and set aside
  3. Heat the oil over a medium heat in a large frying pan
  4. Add the sliced red onions and turn the heat down to low. Add a pinch of salt. Slowly cook the onions until they are softened and starting to brown slightly, approximately 20-25 minutes
  5. Add the tbsp. of balsamic vinegar, increase the heat to medium high and continue to cook the onions until the vinegar has reduced to a sticky glaze
  6. Drain and rinse the lentils and add to the pan
  7. Slice the sausages and add to the pan and toss with the onions and lentils
  8. Add the spinach and mix into the pan until it has wilted
  9. Add salt to taste and serve with an extra drizzle of balsamic vinegar if desired
