Smoky Pumpkin Curry with Quorn Pieces

Ingredients
- 300g Quorn Pieces
- 2 tbsp olive oil
- 1 large red onion
- 2 garlic cloves
- 300g diced pumpkin
- 2 courgettes
- 2 orange peppers
- 500g passata
- 50g tomato purée
- 3 tbsp smoked paprika
- 2 tbsp garam masala
- 1 tbsp crushed chilli
Method
- Heat the olive oil on a medium heat. Chop and then fry the onion and garlic, then chop the pumpkin into small chunks and sauté until soft.
- Add the Quorn Pieces, courgettes, peppers, passata, the herbs and spices
- Simmer on a low heat for 15 minutes.
- Serve with rice or mashed potatoes shaped into eyeballs for a dash of spookiness
