Ingredients

  • 300g Quorn Pieces
  • 2 tbsp olive oil
  • 1 large red onion
  • 2 garlic cloves
  • 300g diced pumpkin
  • 2 courgettes
  • 2 orange peppers
  • 500g passata
  • 50g tomato purée
  • 3 tbsp smoked paprika
  • 2 tbsp garam masala
  • 1 tbsp crushed chilli

Method

  1. Heat the olive oil on a medium heat. Chop and then fry the onion and garlic, then chop the pumpkin into small chunks and sauté until soft.
  2. Add the Quorn Pieces, courgettes, peppers, passata, the herbs and spices
  3. Simmer on a low heat for 15 minutes.
  4. Serve with rice or mashed potatoes shaped into eyeballs for a dash of spookiness
