Vegetarian Coronation Chicken Sandwich

Ingredients
- 1 pack Quorn Vegetarian Fillets
- 7 tbsp mayonnaise
- 3 tbsp curry powder
- 1 tsp cinnamon
- 2 tbsp mango chutney
- Handful of sultanas
- Handful of coriander, finely chopped
- Crusty white bread and lettuce to serve
Method
- Add a pack of Quorn Vegetarian Fillets to a pan over a medium heat and cook for undisturbed for 12 minutes.
- Meanwhile, in a separate bowl, mix together the mayonnaise, curry powder, cinnamon, mango chutney and sultanas until combined.
- Once the fillets are cooked, remove from heat and shred with a fork. Add to the coronation mixture with the coriander and mix well.
- Slice up some fresh bread and lay down a few leaves of lettuce. Top with the coronation mixture, sandwich together and serve with your favourite Quorn picnic items!
