Vegetarian Coronation Chicken Sandwich

If you're looking for the perfect meat-free Coronation chicken picnic inspo then look no further! These veggie Quorn Coronation sandwiches combine our vegetarian fillets with a traditional coronation sauce made from mayonnaise, curry powder, a little cinnamon, mango chutney and sultanas.

Delicious to eat and easy to create, these vegetarian Coronation chicken sandwiches are the must-haves for any meat-free picnic party! Serve your coronation filling in slices of crusty white bread with lettuce, alongside your favourite Quorn picnic products!

Ingredients

  • 1 pack Quorn Vegetarian Fillets
  • 7 tbsp mayonnaise
  • 3 tbsp curry powder
  • 1 tsp cinnamon
  • 2 tbsp mango chutney
  • Handful of sultanas
  • Handful of coriander, finely chopped
  • Crusty white bread and lettuce to serve

Method

  1. Add a pack of Quorn Vegetarian Fillets to a pan over a medium heat and cook for undisturbed for 12 minutes.
  2. Meanwhile, in a separate bowl, mix together the mayonnaise, curry powder, cinnamon, mango chutney and sultanas until combined.
  3. Once the fillets are cooked, remove from heat and shred with a fork. Add to the coronation mixture with the coriander and mix well.
  4. Slice up some fresh bread and lay down a few leaves of lettuce. Top with the coronation mixture, sandwich together and serve with your favourite Quorn picnic items!
