Vegetarian Marry Me Chicken with Quorn Fillets

Ingredients

  • 1 pack of Quorn Vegetarian Fillets
  • 1 tbsp butter
  • 2 tsp chopped garlic
  • 10 cherry tomatoes, roasted and chopped
  • 500ml vegetable stock
  • 300ml double cream
  • 1 tsp tomato puree
  • 4 tbsp parmesan
  • 2 tbsp plain flour
  • Handful of fresh basil
  • 1 tsp oregano
  • 1 tsp chilli flakes
  • Salt & pepper

Method

  1. Coat the Quorn Vegetarian Fillets in the flour.
  2. In a large pan and melt the butter over a gentle heat. Then fry off the floured Quorn Vegetarian Fillets in the pan, cooking for a few minutes each side until golden.
  3. Remove the Quorn Vegetarian Fillets from the pan, and then add the chopped garlic, vegetable stock, double cream, parmesan, oregano, chilli flakes, salt & pepper, tomatoes & tomato purée into the pan & stir.
  4. Add the Quorn Vegetarian Fillets back in & cook on medium heat until the sauce thickens for around 10 minutes.
  5. Garnish with fresh basil and enjoy! Enjoy on it's own or spoon over pasta or rice!
