Ingredients
- 1 pack of Quorn Vegetarian Fillets
- 1 tbsp butter
- 2 tsp chopped garlic
- 10 cherry tomatoes, roasted and chopped
- 300ml vegetable stock
- 300ml double cream
- 1 tsp tomato puree
- 4 tbsp parmesan
- 2 tbsp plain flour
- Handful of fresh basil
- 1 tsp oregano
- 1 tsp chilli flakes
- Salt & pepper
Method
- Coat the Quorn Vegetarian Fillets in the flour.
- In a large pan and melt the butter over a gentle heat. Then fry off the floured Quorn Vegetarian Fillets in the pan, cooking for a few minutes each side until golden.
- Remove the Quorn Vegetarian Fillets from the pan, and then add the chopped garlic, vegetable stock, double cream, parmesan, oregano, chilli flakes, salt & pepper, tomatoes & tomato purée into the pan & stir. Add more stock if required.
- Add the Quorn Vegetarian Fillets back in & cook on medium heat until the sauce thickens for around 10 minutes.
- Garnish with fresh basil and enjoy! Enjoy on it's own or spoon over pasta or rice!

Absolutely delicious. Will certainly make this again. I did add a few extra cherry tomatoes as 10 didn't look quite enough. Served with rice and long stemmed broccoli.

I used less cream and added in some cream cheese for the creaminess without quite so many calories. Also added extra garlic and tomatoes, delicious!

Really yummy, used Greek Yoghurt instead of creme fraiche as a healthier alternative and we loved it! Definitely don't use as much as 500ml stock though.
