
Vegetarian Creamy Tuscan Chicken Pasta

Tuscan chicken is such a delicious dinner and one that everyone will love! Sundried tomatoes, cream, parmesan, garlic, paprika and spinach blend to a rich and incredibly moreish pasta sauce.
Cooked with Quorn Pieces and rigatoni pasta, this 30-minute meal, makes the most unbelievable vegetarian Tuscan chicken pasta.

300g Quorn Pieces

1tsp olive oil

1 onion, finely sliced

2 tsp smoked paprika
-
2 cloves of garlic, finely chopped

300g dried rigatoni
-
300ml single cream
-
100ml vegetable stock
-
8 sundried tomatoes, finely chopped

60g fresh spinach, coarsely chopped

50g vegetarian hard cheese, finely grated

Salt and ground black pepper

Method
- Heat the olive oil in a non-stick pan. Add the sliced onion and fry for 5 minutes until soft. Stir in the paprika and garlic.
- Heat a large saucepan of salted water and add the pasta. Bring back to the boil. Simmer for around 10 minutes or until tender.
- Add the Quorn Pieces to the pan and stir for a minute or so. Stir in the cream, stock, sundried tomatoes, fresh spinach and vegetarian hard cheese. Season with salt and pepper.
- Gently bring to the boil and simmer for around 10 minutes until the Quorn Pieces are cooked through and the sauce has thickened. Drain the pasta and add it to the sauce, stirring until combined.
- Serve up in bowls with side salad (optional) and enjoy!
