Airfryer Vegetarian Roast Christmas Wellington

This Quorn Vegetarian Roast Christmas Wellington makes the perfect festive centrepiece. It’s made in the airfryer meaning there is no need to put the oven on and it’s also gluten free. Don’t forget to serve up with cranberry sauce and all the trimmings!

Ingredients

  • 1 Quorn Vegetarian Roast
  • 2 packets of gluten free puff pastry
  • 400g chestnut mushrooms, finely chopped
  • 80g leek greens, finely chopped
  • Handful of fresh roasting herbs, finely chopped
  • 2 tsp miso paste
  • 2 tbsp cranberry sauce
  • Salt and pepper
  • Milk or egg to glaze

Method

  1. Place the Quorn Vegetarian Roast on the bake setting of the air fryer for 40 mins at 170c.
  2. Whilst it’s cooking fry off the mushrooms, leek greens & roasting herbs in a little oil. Fry until they reduce in size and no more mixture comes off them. Stir through the miso paste and season with salt and pepper.
  3. Allow the mushroom mixture to fully cool and the Quorn Roast to cool too.
  4. Once the Quorn Roast is cool, remove the outer film and metal end clips and coat it in the cranberry sauce and put to one side briefly.
  5. Place one sheet of puff pastry down, spoon a layer of the mushroom mixture into the centre of the pastry, then place the Quorn Roast on it. Top and cover with the rest of the mushroom mixture.
  6. Brush around the mixture with either milk or beaten egg and then tightly place the second sheet of pastry on top. Cut around the edges to make it neat and seal with a fork.
  7. With any of the pastry off cuts, cut out festive shapes and place them on the wellington. Coat with egg wash.
  8. Place in the air fryer for around 20 minutes at 180c till golden and crisp. Remove once fully cooked and the pastry is crisp.

Delicious! Used 1 ready made roll of pastry cut into two, wider piece going over the top. Easy to make. Would be very pleased to be served this for Xmas.
