Cheeseburger Quorn Mince Taco Boats

Ingredients

  • 150g Quorn Vegetarian Mince
  • 4 taco boats
  • 2 tbsp cream cheese
  • 1 red onion, finely chopped
  • 1 red pepper, finely chopped
  • 8 gherkins
  • 8 cherry tomatoes
  • 2 tbsp burger seasoning (salt, pepper, paprika, garlic powder and onion powder)
  • 60g Cheddar & Red Leicester, grated
  • 150ml vegetable stock

Method

  1. Finely dice the peppers, onions and gherkins.
  2. Fry off the chopped onions and peppers for 2 minutes and then add in the Quorn Mince.
  3. Add in the seasoning & cream cheese and stir before adding 150ml of stock.
  4. Pop a lid onto the pan, leaving to cook and for 5-10 minutes. Then add the cheeseburger taco mix to the taco boats adding cheese mix and garnish with more onions, gherkin & tomatoes.
  5. Put the boats into the oven until the cheese has melted and enjoy!
