Ingredients

For the Dukkha Quorn Fillets:

  • 6 Quorn Fillets
  • 75g pistachio nuts
  • 1 tbsp. garam masala
  • 1 tsp. fennel seeds
  • 1 tbsp. honey

For the 5 bean hummus:

  • 240g mixed cooked beans
  • 150g 0% fat high protein yoghurt
  • 1 tbsp. tahini
  • 2 garlic cloves
  • 1 lemon, juice only
  • A handful coriander leaves

For the broccoli quinoa:

  • 300g broccoli florets
  • 250g cooked red and white quinoa

Method

For the Dukkha Quorn Fillets:

  1. Place the nuts, seeds and spices into a food processor. Blitz to form a coarse mix.
  2. Place the Quorn Fillets on a baking tray lined with non-stick baking paper. Mix the honey with one tablespoon of water. Brush both sides of the Quorn Fillets with the honey mix then coat in the prepared dukkha mix.
  3. Pre-heat the oven to 200°C (fan)/220°C electric/Gas Mark 7.
  4. Cook the dukkha coated fillets in the pre-heated oven for 15 minutes.

For the 5 bean hummus:

  1. Place all of the ingredients into a food processor and blitz until smooth.

For the broccoli quinoa:

  1. Place the broccoli florets into a food processor and blitz to breadcrumb consistency.
  2. Mix the blitzed broccoli and quinoa in a bowl. Set to one side.

Serving and meal prep:

  1. If meal prepping place 6 Dukkha Quorn Fillets into 6 freezer safe meal prep containers.
  2. Divide the broccoli quinoa between the containers. Freeze meals as required.
  3. To re-heat, defrost before reheating and ensure food is piping hot. Portions can be microwaved, reheated in a non-stick pan or cooked in the oven 200°C (fan)/220°C electric/Gas Mark 7 until piping hot.
