Ingredients
- 1 pack of Quorn Vegetarian Chicken Fillets
- 1 tbsp butter
- 6 garlic cloves, minced
- 1 tbsp fresh ginger, minced
- 4 tbsp honey
- 3 tbsp soy sauce
- 1 tbsp black vinegar (or rice vinegar)
- 1 tsp olive oil
- To serve:
- Cooked rice
- 2 carrots, grated
- 1 cucumber, sliced
- 200g of edamame beans
- Sliced spring onions
- Fresh coriander
- Lime
- Fresh chilli
- Chilli oil
- Sesame seeds
Method
- Heat the oil in a large non-stick frying pan. Add the Quorn Fillets, season with salt & pepper, and cook according to pack instructions. Turn occasionally. Remove from the pan and set aside.
- Lower the heat slightly and add the butter to the same pan. Stir in the garlic & ginger and cook for a minute, then add in the honey, soy sauce & vinegar. Allow the sauce to bubble gently for a few minutes until glossy and slightly reduced.
- Return the Quorn Fillets to the pan, turning them over in the sauce to coat evenly. Cook for a couple of minutes to warm through.
- Remove Fillets from the pan and slice into strips. Serve with rice, grated carrot, cucumber and edamame beans. Make sure to spoon over any extra sauce from the pan!
- Top with sliced spring onions, coriander, lime, fresh chilli, chilli oil and sesame seeds – enjoy!
