Ingredients

  • 1 pack of Quorn Vegetarian Chicken Fillets
  • 1 tbsp butter
  • 6 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 4 tbsp honey
  • 3 tbsp soy sauce
  • 1 tbsp black vinegar (or rice vinegar)
  • 1 tsp olive oil
  • To serve:
  • Cooked rice
  • 2 carrots, grated
  • 1 cucumber, sliced
  • 200g of edamame beans
  • Sliced spring onions
  • Fresh coriander
  • Lime
  • Fresh chilli
  • Chilli oil
  • Sesame seeds

Method

  1. Heat the oil in a large non-stick frying pan. Add the Quorn Fillets, season with salt & pepper, and cook according to pack instructions. Turn occasionally. Remove from the pan and set aside.
  2. Lower the heat slightly and add the butter to the same pan. Stir in the garlic & ginger and cook for a minute, then add in the honey, soy sauce & vinegar. Allow the sauce to bubble gently for a few minutes until glossy and slightly reduced.
  3. Return the Quorn Fillets to the pan, turning them over in the sauce to coat evenly. Cook for a couple of minutes to warm through.
  4. Remove Fillets from the pan and slice into strips. Serve with rice, grated carrot, cucumber and edamame beans. Make sure to spoon over any extra sauce from the pan!
  5. Top with sliced spring onions, coriander, lime, fresh chilli, chilli oil and sesame seeds – enjoy!
