Ingredients
For the Quorn Fillets:
- 6 Quorn Fillets
- 2 lemons, juice only
- ½ tsp. chilli flakes
- 1 tbsp. chopped dill
- 2 tbsp. honey
For the seeded cracker:
- 2 high protein wraps
- 1 egg white
- 1 tbsp. linseeds
- 1 tbsp. poppy seeds
For the Scandi protein bowl meal prep:
- 3 eggs
- 250g cooked puy lentils
- 200g cooked beetroot, diced
- 200g edamame beans
- 60g baby spinach
- ¼ cucumber, sliced
- 120g low fat high protein cottage cheese
Method
For the Quorn Fillets:
- Place the Quorn Fillets on a baking tray lined with non-stick baking paper.
- Pre-heat the oven to 200°C (fan)/220°C electric/Gas Mark 7.
- Cook the Quorn Fillets for 15 minutes.
- Mix the lemon juice, chilli flakes, chopped dill and honey in a small bowl and set to one side.
For the seeded crackers:
- Place the wraps onto 2 baking trays. Brush the wraps with egg white and scatter over the seeds.
- Pre-heat the oven to 200°C (fan)/220°C electric/Gas Mark 7.
- Bake in a pre-heated oven for 7-8 minutes or until golden brown. Allow to cool and break into large shards.
For the Scandi Protein bowl meal prep:
- Bring a saucepan of water to the boil. Carefully place the eggs into the water and boil for 5 minutes.
- Remove and plunge into cold water to cool.
- Peel the eggs and slice in half.
- Mix the diced beetroot and edamame beans in a small bowl.
- If meal prepping place 6 Quorn Fillets into 6 meal prep containers. Drizzle each fillet with the prepared dressing.
- Divide the puy lentils, beetroot and edamame beans, spinach, egg halves, cottage cheese and seeded crackers between the containers. Garnish with dill fronts and lemon wedges.
- This recipe can be halved if prepping for x3 meals.
