Ingredients
- 4 Quorn Vegetarian Fillets
- 1 red onion, sliced
- 4 cloves garlic, crushed
- 1 thumb ginger, peeled and sliced into matchsticks
- Pinch chilli flakes
- 3 tbsp low salt soy sauce (to make this recipe gluten free, use gluten free soy sauce)
- 4 tbsp honey
- 100g tomato puree
- 300ml low salt vegetable stock
- 1 tbsp rice vinegar
- 100g sugar snap peas, sliced
- 2 spring onions, sliced
- 1 tsp sesame seeds
To serve (optional):
- Brown rice
- Tenderstem broccoli
Method
- Place the onion, garlic, ginger, chilli flakes, soy sauce, honey, tomato puree and stock into the slow cooker. Place the lid on the slow cooker. Cook for 6 hours on low or 4 hours on high.
- Add the Quorn Vegetarian Fillets and sugar snap peas. Stir and cook for a further 15 minutes.
- Use 2 forks to shred the Quorn Vegetarian Fillets into the sauce. Garnish with sliced spring onion and sesame seeds.
- Serve with brown rice and tenderstem broccoli.

So tasty! I used only two tablespoons of tomato puree, I defrosted my Quorn chicken then shredded it and added it to the slow cooker 15 mins before serving. I served mine with sticky rice. Would definitely make again.

Really tasty recipe (one with less tomato paste), enjoyed by the whole family but I struggle to see why it needs to be done in a slow cooker. We’ve tried it again made in a pan and it’s just as delicious.

Wish I’d read the reviews before making as it was too tomatoey for me (I thought it might be once I realised how much 100g was!). Made it again with only 2 tbsp of puree and it was much nicer :)

This recipe is far too tomatoey, and the tomato puree overpowers the other flavours. It's quite bland. I would half the amount of puree and increase the amounts of everything else. It came out like like a tomatoey quorn stew
