Ingredients
- 2 52g Quorn Fillets
- 2 tsp chipotle paste
- 2 tbsp tomato purée
- 1 tsp chilli flakes
- 1 tsp smoked paprika
- 1 tsp cumin
- Salt and pepper to taste
- 4 small tortilla wraps
- 1 large tomato
- 1 shallot
- 10g coriander
- 35g mango
- Low calorie cooking spray
- 1 lime (plus wedges to serve)
- Crushed avocado (optional)
- Crumbled feta (optional)
Method
- Heat a pan and add the spices and allow to toast for 1 minute.
- Add the chipotle and tomato paste and 150ml water. Stir until all the paste has melted. Add the Quorn Fillets and cook for 10 minutes (the sauce should reduce by a third).
- While it cooks, make a quick salsa by dicing the tomato, mango and shallot and adding to a bowl. Season with salt and the juice of half a lime. Finish with finely chopped coriander. Leave to one side.
- Take your Quorn Fillets out and shred with a fork before adding back into the sauce. Add the rest of the juice from the other half of the lime and stir until it is all covered.
- Heat the wraps and fill with the Quorn mix. Finish with a little salsa, avocado and feta (if using) and a sprinkling of coriander.
- Enjoy with some extra wedges of lime.
