Ingredients

  • 4 Quorn Southern Fried Burgers

  • 2 tbsp. light mayonnaise

  • 2 gherkins, finely chopped

  • 1 tbsp. lemon juice

  • 1 small garlic clove, crushed

  • 1 tbsp. grated vegetarian parmesan

  • 1 head romaine lettuce, torn

  • 4 ciabatta style buns

  • 20g mixed salad leaves

  • Extra parmesan to garnish (optional)

Method

  1. Pre-heat oven to 200C (fan)/220C electric/Gas Mark . Place the Quorn Southern Fried Burgers onto a baking tray and cook for 16 minutes.
  2. Place one tablespoon of mayonnaise and the gherkins in a small ramekin, mix well and set to one side.
  3. Place the remaining tablespoon of mayonnaise into a small bowl. Add the lemon juice, garlic and parmesan, mix well. Add the torn romaine lettuce and toss gently to coat.
  4. Heat a griddle pan over a medium heat. Slice the ciabatta buns in half and griddle for 1-2 minutes on the cut sides.
  5. To build the burgers spread the base of each bun with the mayonnaise and gherkin mix. Top with a few salad leaves.
  6. Place a Quorn Southern Fried Burger on top and add a spoon of Caesar dressed romaine leaves. Garnish with extra parmesan shavings if desired and top with the ciabatta bun lid.
