Quorn Vegetarian Mince Chilli Cheese Bake
This Quorn Mince Chilli Cheese Bake is a quick and easy Mexican twist on the classic Chilli Con Carne. This comforting recipe combines delicious Quorn Vegetarian Mince and black beans with an oozy layer of melted cheese and fresh avocado! It’s also high in protein and packs a punch from the chillies too!

Ingredients
- 200g Quorn Vegetarian Mince
- 140g protein cheese
- 100g black beans
- 100g brown rice (uncooked)
- 100g avocado
- 1 tin of chopped tomatoes
- 1 red pepper
- 1 red onion
- 1 clove of garlic, minced
- 2 small green chillies
- Fresh coriander
- Spray oil
- Mixed herbs
- Paprika
- Salt & pepper
Method
- Dice up a red onion, a red pepper and 2 green chillies.
- Spray a frying pan with spray oil, add in the chopped vegetables and garlic and fry these off until softened. Next add in your Quorn Mince, paprika, mixed herbs and salt & pepper.
- Add in the uncooked brown rice and add 500ml of water to the pan. Cover with a lid and allow the rice to cook.
- Once the rice is nearly cooked, stir in a tin of chopped tomatoes and the black beans.
- Add to an ovenproof baking dish and top with your protein cheese. Grill until the cheese is melted.
- Add 100g of avocado and your fresh coriander to the top and enjoy!

Chefs tip
You can change up this dish depending on whether you like spice! If you can handle the heat you can add in extra fresh chillies when frying off the vegetables or sprinkle with dried chilli flakes when cooked.
