Vegetarian Burger in a Bowl with Quorn Mince

Ingredients

  • 150g Quorn Mince
  • ½ an onion, diced
  • ½ a green pepper, diced
  • 1tbsp olive oil
  • Large handful of rocket/lettuce
  • 3 large pickles, chopped finely
  • 1tsp smoked paprika
  • 1tsp onion granules
  • 1tsp chopped dill
  • 1tsp chopped garlic
  • 2 potatoes, sliced into chips
  • 30g of grated mozzarella & cheddar
  • 4tbsp burger sauce

Method

  1. Make your chips by coating the sliced potatoes in ½ a tbsp of oil and air frying for 20 minutes on 180 degrees.
  2. Meanwhile, fry off the Quorn Mince, onion and pepper in a large pan for around 5 minutes. Add in the chopped garlic, smoked paprika and onion granules and cook for a further 2 minutes.
  3. Add half the chopped dill to a pan, along with the chopped pickles and cook for a further 3 minutes.
  4. Once all cooked through, add your chips to a bowl with the salad, Quorn Mince mixture, grated cheese and burger sauce. Top with the rest of the dill and enjoy!
