15-Minute Creamy Cajun Chicken with Quorn Fillets

Ingredients
- 4 Quorn Vegetarian Fillets
- 10 sprays one calorie cooking spray
- 1 onion, sliced
- 2 cloves garlic, crushed
- 50g sun blushed tomatoes, chopped
- ½ tbsp Cajun seasoning
- 150g light crème fresh
- 200ml low salt vegetable stock
- ½ lemon, juice only
- Coriander leaves
Serving suggestion:
- Green beans
- Rice
Method
- Place a non-stick frying pan over a medium heat. Add the cooking spray, Quorn Vegetarian Fillets and onion to the pan. Sauté for 8 minutes stirring regularly and turning the fillets to brown on both sides.
- Add the garlic, sun blushed tomatoes and Cajun seasoning, cook for a further 2 minutes.
- Add the crème fresh and stock, stir and simmer for 5 minutes.
- Remove from the heat and add the juice from half a lemon and garnish with coriander leaves.
- Serve with rice and steamed green beans (optional) or choice of vegetables and enjoy.
