This Vegetarian Chicken Satay Salad is summer in a bowl - crunchy veggies, sweet slices of mango and spiced Quorn Pieces are all brought together with a creamy peanut dressing. Delicious!

Ingredients

  • For the spiced Quorn Pieces:

  • 300g Quorn Pieces

  • 1 tsp sesame oil

  • 1 tsp soy sauce

  • 1 tsp garlic powder

  • ½ tsp ground coriander

  • ½ tsp white pepper

  • 1 tsp chilli flakes (optional)

  • For the salad:

  • 1 ripe thinly sliced mango

  • Large handful of finely shredded white cabbage

  • ½ cucumber, sliced

  • 2 large carrots, julienned

  • 1 red pepper, sliced

  • 3 spring onions, sliced

  • Juice of ½ a lime

  • A handful of fresh coriander

  • 1 red chilli (optional)

  • Chopped peanuts (optional)

  • Sesame seeds (optional)

  • For the satay dressing:

  • 2 tbsp smooth peanut butter

  • 1 tbsp soy sauce

  • 1 tsp sesame oil

  • Juice of ½ lime

  • ½ tsp grated ginger

  • 1 tsp maple syrup

  • Warm water to loosen

Method

  1. Heat the sesame oil in a pan. Add the Quorn Pieces, spices and soy sauce and fry for around 10 minutes until cooked & lightly golden. Allow to cool.
  2. Whisk together the ingredients for the satay dressing until smooth - adding small splashes of water gradually until it reaches a pourable consistency. Taste & adjust with extra soy sauce or lime juice as needed.
  3. In a large bowl, add the Quorn Pieces, mango, cabbage, cucumber, carrot, red pepper, half of the spring onions, chilli & coriander. Drizzle over the satay dressing and toss together until evenly combined.
  4. Finish with crushed peanuts, sesame seeds, the rest of the spring onion and more coriander. Enjoy!
