Vegetarian Tomato & Spicy Beef Roast Curry

Ingredients

  • ½ leftover Quorn Beef Roast, cut into cubes
  • 1 onion, very finely diced
  • 1 red pepper, very finely diced
  • 3 cloves of minced garlic
  • 1 tbsp paprika
  • ¾ tsp chilli powder
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp turmeric powder
  • ¼ tsp nutmeg
  • 1 tsp garam masala
  • ½ tsp fennel powder
  • ½ carton passata
  • 1 can chopped tomatoes

Method

  1. Finely dice the onion & pepper and sauté it in olive oil.
  2. Add in the cubed Quorn Beef Roast once the onion and pepper are soft along with the garlic and seasonings.
  3. Add the passata and chopped tomatoes in and cook for 20-30 minutes with a lid on allowing the sauce to thicken.
  4. Serve with boiled rice and enjoy!
