Quorn Scampi Burger

Ahoy! Our Vegan Fishless Scampi makes a great burger. Layer on crispy bites of fishless scampi with a creamy vegan tartar sauce. The perfect meal for a bite by the sea.

Ingredients

For the vegan tartar sauce
  • 2 tbsps vegan mayo or vegan yogurt
  • 2 tsp chopped cornichons
  • 2 tsp chopped capers
  • 1/2 tsp dill
  • 1 tbsp lemon juice

Method

  1. Preheat oven to 220°C/Fan 200°C/Gas 7. Place Quorn Vegan Scampi on a baking tray, cook on the middle shelf for 12 mins.
  2. Meanwhile, combine all the tartar sauce ingredients in a bowl and mix well, set aside.
  3. For the brioche buns, toast in the oven for the final 5 minutes of the scampi cooking time until slightly crispy.
  4. To assemble the burger, layer on vegan cheese, followed by scampi, lettuce and top with vegan tartar sauce. Serve with an extra squeeze of lemon and enjoy!
