Ingredients

  • For the kebabs:
  • 8 Quorn Wild Garlic & Parsley sausages, cut into 3 on the diagonal
  • 8 baby bell peppers, mixed colours, cut into quarters
  • 2 courgettes, cut into approx 2.5cm thick slices
  • For the marinade:
  • 1 orange, juice and zest
  • 1 lime, juice and zest
  • 2 tbsp rapeseed or olive oil
  • 2 tbsp fresh mint, chopped
  • For the salad:
  • 100g rocket
  • 1 orange, segmented
  • 150g cooked beetroot, cut into fine matchsticks
  • 25g toasted pine nuts (optional)

4 metal or wooden skewers (if using wooden skewers, soak in water for 2 - 3 minutes prior to use to prevent them from burning)
