Quorn Vegetarian Mince Burritos

Spice up your mid-week meat-free meals with these delicious vegetarian Burritos filled with spicy Quorn Vegetarian Mince with Mexican spices, mixed beans, cheese, jalapeños and lettuce all parcelled up in a soft tortilla wrap.

Make it a veggie Mexican feast by serving it up with a fresh side salad and a zingy guacamole.

Ingredients

  • 125g Quorn Vegetarian Mince
  • 2 tortilla wraps
  • 1 onion, finely diced
  • 5 cloves garlic, minced
  • 1 yellow pepper
  • 1 tbsp chilli con carne seasoning
  • 1 red chilli, finely chopped
  • 1 can mixed beans
  • 1 can chopped tomatoes
  • 1 tbsp tomato purée
  • 60g cheese
  • Jalapeños
  • 1 pack of Mexican rice
  • 1 head of lettuce, chopped
  • Salt & pepper
  • Guacamole (optional)

Method

  1. Finely diced the onion, peppers, garlic and chilli & sautée in olive oil
  2. Once the vegetables have softened add in the Quorn Vegetarian Mince and allow to cook for a few minutes
  3. Add in the tomato puree, chopped tomatoes, along with the chilli con carne seasoning and salt & pepper then simmer for a further 5 – 10 minutes.
  4. Add in the mixed beans and heat through. Cook your Mexican rice according to pack instructions.
  5. Lay down your wrap and top with guacamole (optional), the spicy Quorn Mince mix, cheese, lettuce, jalapeños and Mexican rice. Now wrap into a burrito and toast off in a pan until golden.
  6. Serve and enjoy!
