Ingredients

  • 300g Quorn Vegetarian Mince
  • 1 large onion, chopped
  • 1 red pepper and 1 yellow pepper, chopped
  • 1 tin of jackfruit
  • 1 sachet of taco seasoning
  • 50g fresh coriander
  • 1 lime
  • 1 tsp of olive oil
  • 8 jalapeño slices (optional)

Method

  1. Add the oil to a frying pan and fry off the chopped onion, once this has softened add in the chopped peppers and fry for 5 minutes.
  2. Drain the jackfruit, shred with a fork and season with the taco seasoning. Add the seasoned shredded jackfruit to the pan, cook until soft.
  3. Finally, add the Quorn Mince and cook according to pack instructions.
  4. Once cooked, add to a bowl/tuppaware container and top with coriander, lime juice and jalapeños if you like the spice! You can serve this with boiled rice, salad or tortilla wraps.
  5. Enjoy!
