Smiley Face Mini Shepherd’s Pies with Quorn Vegetarian Mince

The whole family will love this Mini Veggie Shepherd’s Pie hack! Filled with tasty Quorn Vegetarian Mince and ready in just 30 minutes, these delicious vegetarian mini Shepherd’s pies are perfect for quick and easy dinners or after school snacking!

Simply fry off Quorn Vegetarian Mince with frozen veggies and a little seasoning then add to a muffin tray, before topping with cheese and potato smiley faces for a fun-filled meal!

Made with Quorn Vegetarian Meat-Free Mince

Ingredients

  • 300g Quorn Vegetarian Mince
  • 200g frozen vegetable mix (or any other leftover veg)
  • Shepherd's pie seasoning mix
  • 12 potato smiley faces, cooked to pack instructions
  • 75g grated cheese
  • 1 tsp mixed herbs
  • Spray oil

Method

  1. Preheat the oven to 200°C. Spray a large frying pan with spray oil and fry off the Quorn Mince. Once cooked through, add in the shepherd's pie seasoning mix adding water according to packet instructions.
  2. Tip the Quorn Mince mix into a bowl and stir through the frozen or leftover vegetables of your choice. Grease a muffin tin with spray oil and then spoon in the Quorn Mince mix equally into 12 portions.
  3. Top each individual shepherd's pie with grated cheese and a potato smiley face. Then sprinkle with mixed herbs.
  4. Pop into the oven for 8 minutes or until the cheese has melted.
  5. Spoon out of the muffin tray and enjoy!
