Ingredients

  • 1 pack Quorn Hot & Spicy Bites
  • 500g Maris Piper potatoes, peeled
  • 20 sprays one calorie cooking spray or a drizzle of olive oil
  • 50g low fat yoghurt
  • ½ tsp. gochujang paste
  • 2 spring onions, sliced
  • 30g kimchi
  • ½ tsp. sesame seeds
  • Coriander leaves

Method

  1. Pre-heat the oven to 200°C (fan)/220C electric/Gas Mark 7.
  2. Cut the potatoes into chips approximately 1cm thick. Line a baking tray with baking paper and arrange the chips in one even layer. Spray with cooking spray or a drizzle of olive oil and toss to coat. Cook in a pre-heated oven for 45 minutes.
  3. After 45 minutes add the Quorn Hot & Spicy Bites and cook for a further 16 minutes.
  4. Mix the yoghurt and gochujang paste in a small bowl.
  5. Place the cooked chips onto a serving platter. Arrange the Quorn Hot & Spicy Bites on top.
  6. Scatter over the spring onions, kimchi and sesame seeds.
  7. Drizzle over the prepared yoghurt and gochujang sauce.
  8. Garnish with coriander leaves and enjoy!
