1 pack Quorn Vegan Fishless Scampi
6 small corn tortillas
1 small avocado
1 medium tomato
150g shredded red cabbage
For the vegan yoghurt dressing:
3 tbsps soy yoghurt
1/2 tsp lime juice
Salt and pepper to taste
To serve:
Handful of coriander
Squeeze of lime

Method

Airfry the Quorn Vegan Fishless Scampi for 10 minutes according to your air fryer instructions, until crispy and golden.
Meanwhile, toast the corn tortillas in a dry pan for 15 seconds on each side.
Combine all the yoghurt dressing ingredients in a small bowl and mix well.
Assemble the tacos; with the shredded cabbage, avocado, and tomato, finishing with the yoghurt dressing, coriander and a squeeze of lime juice.
